Ingredients

- 2 tbsp Avocado oil
- 4 slices diced Turkey bacon
- 1.5 cups finely chopped Broccoli florets
- 0.5 seeded and diced Red bell pepper
- 0.25 cups finely diced White onion
- 0.5 tsp Kosher salt
- 0.25 tsp Black pepper
- 8 large organic Eggs
- 0.5 cups grated Cheese
- 4 burrito-sized Tortillas

Preparation

1. Heat 1 tbsp Avocado oil in a large sauté pan over medium-high heat. Add 4 slices diced Turkey bacon and cook for 5-8 minutes until brown and crispy.
2. Add 1 tbsp Avocado oil, 1.5 cups finely chopped Broccoli florets, 0.5 Red bell pepper seeded and diced, and 0.25 cups finely diced White onion. Season with 0.5 tsp Kosher salt and 0.25 tsp Black pepper. Cook, stirring often, for 5 minutes until Broccoli is tender.
3. Crack 8 large organic Eggs into a bowl. Season with 0.5 tsp Kosher salt and 0.25 tsp Black pepper. Whisk to combine. Pour into the pan and cook over medium-low heat, stirring often, for 3 minutes until eggs are cooked through. Stir in 0.5 cups grated Cheese. Transfer to a plate to cool slightly.
4. Heat a Tortilla in a pan over medium heat. Transfer to a cutting board, top with egg mixture, roll tightly, and repeat.

Good to know
