Ingredients

2 tbsp Butter, 1 roughly chopped Onion, 250g / 8.82oz roughly chopped Ham, 4 Eggs, 2 Egg yolks, 500ml / 16.91fl oz Cream, 100g / 3.53oz grated Cheddar, to taste Salt, to taste Pepper

Preparation

1. Preheat the oven to 180°C (356°F). 2. Melt 2 tbsp Butter in a frying pan and gently fry 1 roughly chopped Onion until soft. 3. Add 250g / 8.82oz roughly chopped Ham and remove from the stove. 4. Whisk together 4 Eggs, 2 Egg yolks, and 500ml / 16.91fl oz Cream with a little Salt and Pepper. 5. Grease a large 12-cup muffin pan. 6. Spoon the Onion and Ham mixture into the bases of the muffin pan and sprinkle over 100g / 3.53oz grated Cheddar. 7. Pour the Egg and Cream mixture into each muffin cup until it is about 1mm from the top. 8. Bake for about 25 minutes until the egg mixture is set and the top is golden. 9. Cool for 10 minutes and remove from the tin. Serve hot or cold.
