Ingredients

- 4 medium White potatoes
- 3 tbsp Olive oil
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp Chili powder
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 4 slices diced Bacon
- 1/3 cup diced White onion
- 2 tbsp grass-fed Unsalted butter
- 3/4 cup mixed Shredded cheese

Preparation

1. Cut 4 medium White potatoes into medium fries.
2. Toss in a large bowl with 3 tbsp Olive oil, 1 tsp Kosher salt, 1 tsp Black pepper, 1 tsp Chili powder, 1 tsp Garlic powder, and 1 tsp Onion powder.
3. Set aside.
4. Heat a large skillet over medium heat.
5. Add 4 slices diced Bacon and cook until crispy, about 5 minutes.
6. Remove with a slotted spoon to a paper towel-lined plate.
7. Carefully pour out all but 2 tbsp of the bacon fat.
8. Add 1/3 cup diced White onion and cook for about 3 minutes until soft.
9. Add 2 tbsp grass-fed Unsalted butter and the potatoes, stir, then cover with a lid.
10. Cook for 15 minutes, stirring every 5 minutes.
11. Remove the lid and cook for another 5 minutes, stirring occasionally until the potatoes are tender and crispy in places.
12. Spread the Bacon pieces and 3/4 cup mixed shredded Cheese evenly on top, re-cover, reduce the heat to low, and cook for a couple of minutes until the cheese has melted. Serve and enjoy.
