Ingredients

1/2 grated Carrot, 1/2 grated Zucchini, 1/2 grated Parsnip, 150g / 5.29oz Sauerkraut, 1/4 cup Coriander leaves, 4 slices Wholemeal sourdough, 80g / 2.82oz sliced Haloumi cheese, 2 large Eggs, 2 tsp Extra virgin olive oil

Preparation

1. Heat 2 tsp extra virgin olive oil in a large frying pan over medium heat. 2. Fry the grated carrot, zucchini, and parsnip for 2 minutes or until softened. 3. Mix in 150g / 5.29oz sauerkraut and 1/4 cup coriander leaves. 4. Move the vegetables to one side of the pan to keep warm. 5. Toast 4 slices of wholemeal sourdough bread. 6. Add a little extra virgin olive oil to the pan if needed. Brown 80g / 2.82oz sliced haloumi cheese on both sides and fry 2 large eggs until just set. 7. Top the toasted sourdough with the vegetable and sauerkraut mixture, followed by the haloumi and eggs.

Good to know

Drizzle a little sriracha chili sauce over the top of each serving for a spicy kick. Any root vegetables will work as substitutes. Ensure vegetables are softened adequately for easy digestion.
