Ingredients

- 1 Organic Lemon
- 1.5kg / 52.91oz Watermelon
- 200ml / 6.76fl oz Pomegranate Juice
- 500ml / 16.91fl oz chilled Mineral Water

Preparation

1. Wash 1 Organic Lemon, dry, and grate the thin peel.
2. Halve and juice the lemon.
3. Halve 1.5kg / 52.91oz Watermelon, remove large seeds if any, cut one wedge into 6 triangles with the rind, and set aside for garnish.
4. In a tall blender, puree 300g / 10.58oz Watermelon flesh with lemon juice until smooth.
5. Dice the remaining watermelon (about 500g / 17.64oz) or scoop into balls.
6. In a pitcher, mix the watermelon puree with lemon zest, 200ml / 6.76fl oz Pomegranate Juice, and 500ml / 16.91fl oz chilled Mineral Water.
7. Optionally sweeten with 1 tbsp honey (not vegan).
8. Serve in glasses with watermelon pieces or balls and garnish with watermelon skewer.
