- 2 sandwich-sized Sausage patty
- 1 tbsp salted grass-fed Butter
- 4 large organic Egg
- to taste Sea salt
- to taste Black pepper
- 4 slices Sourdough bread
- 1/2 ripe Avocado
- 2 tbsp organic with no added sugar Fruit spread
1. Heat a large frying pan over medium-high heat.
2. Add 2 sandwich-sized sausage patties and cook, flipping once, until browned and cooked through. Set aside.
3. Heat the pan over medium heat, add 1 tbsp salted grass-fed butter, and spread it evenly.
4. Crack 4 large organic eggs into the pan, season with sea salt and black pepper to taste. Break the yolks and fry until firm enough to flip. Flip and cook until through. Set aside.
5. Coat the pan with oil or melt extra butter. Add 4 slices sourdough bread and cook for 30 seconds per side.
6. Place 1 slice of bread on each serving plate and top with 2 fried eggs, a sausage patty, and half of 1/2 ripe avocado.
7. Coat the top slices of bread with 2 tbsp organic fruit spread and place on the sandwich. Cut in half and enjoy!

If you don’t have chipotle-infused avocado oil spray, use butter or coconut oil cooking spray with a pinch of cayenne pepper. Sourdough bread is recommended for its nutrient profile; alternatively, use sprouted grain bread.
