200g / 7oz drained Canned sweetcorn, 100g / 3.5oz wilted Spinach, 100g / 3.5oz Self-raising flour, 2 Egg, 70ml / 2.5fl oz Milk, 1 tsp Baking powder, 1 tbsp Oil
Preparation
1. Add 200g / 7oz drained canned sweetcorn, 100g / 3.5oz wilted spinach, 100g / 3.5oz self-raising flour, 2 eggs, 70ml / 2.5fl oz milk, and 1 tsp baking powder to a blender and blend until smooth. 2. Heat 1 tbsp oil in a large non-stick frying pan over medium heat. 3. Spoon tablespoons of the mixture into the pan and shape into circles. 4. Cook until bubbles form, then flip and cook until golden brown. 5. Repeat with remaining batter.
