															- 3 cups  Rolled oats
- 2 tbsp  Ground flaxseed
- 1 tsp  Baking powder
- 1/2 tsp  Cinnamon
- 1/4 tsp  Salt
- 1.5 cups  Milk
- 1/2 cup very ripe Mashed banana
- 1/4 cup  Maple syrup
- 1 tsp  Vanilla extract
1. Preheat the oven to 177°C (350°F) and grease a standard muffin tin well. 
2. In a big bowl, combine 3 cups rolled oats, 2 tbsp ground flaxseed, 1 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt, 1 1/2 cups milk, 1/2 cup very ripe mashed banana, 1/4 cup maple syrup, and 1 tsp vanilla extract. Stir well. 
3. Add batter to the prepared muffin pan, using about 1/4 cup in each cup. 
4. Top with fruit or chocolate chips and bake for 30-34 minutes or until lightly golden brown around the edges and firm to the touch. 
5. Let cool slightly and serve, or store and enjoy later.

															You can use chia seeds or additional oats instead of flaxseed. Optional toppings include chocolate chips, berries, or sliced fruit.
