- 200g / 7.05oz Spelt flour
- 1 pinch Salt
- 1 tsp Baking powder
- 4 medium Eggs
- 80g / 2.82oz Coconut blossom sugar
- 1 tsp Ground vanilla
- 50g / 1.76oz Soft butter
- 100ml / 3.38fl oz Unsweetened oat drink
- 20g / 0.71oz Carob powder
1. Preheat the oven to 200°C (392°F). Grease the mini-Gugelhupf tray with butter or coconut oil.
2. Mix 200g / 7.05oz spelt flour, 1 pinch salt, and 1 tsp baking powder.
3. In a mixing bowl, beat 4 medium eggs, 80g / 2.82oz coconut blossom sugar, and 1 tsp ground vanilla with a hand mixer for 3-4 minutes until frothy.
4. Add 50g / 1.76oz soft butter and mix in.
5. Add the flour mixture and 100ml / 3.38fl oz oat drink, and mix until smooth.
6. Remove one-third of the batter and mix with 20g / 0.71oz carob powder and the remaining oat drink.
7. Fill the Gugelhupf molds with the light batter, then add the dark batter on top. Swirl a fork through the batter to create a marbled effect.
8. Bake for 15-20 minutes until light brown. Remove from oven, cool slightly in the tray, then cool completely on a wire rack. Dust with rice syrup powder before serving.
