- 150g / 5.29oz small Spelt whole grain noodles
- to taste Salt
- 1 small Onion
- 100g / 3.52oz Cooked ham
- 2 medium Egg
- 1 tbsp Milk
- to taste ground Pepper
- 4 sprigs Parsley
- 2 tbsp Butter

Preparation

1. Cook 150g / 5.29oz small spelt whole grain noodles in boiling salted water until al dente, then drain.
2. Peel and finely chop 1 small onion.
3. Dice 100g / 3.52oz cooked ham.
4. Beat 2 medium eggs with 1 tbsp milk, season with salt and ground pepper.
5. Wash, dry, and finely chop 4 sprigs of parsley.
6. Melt 2 tbsp butter in a pan, sauté the onion and ham for 1-2 minutes.
7. Add noodles and fry for 1 minute while stirring.
8. Pour the egg mixture over the noodles, mix well, and let it set for about 3 minutes.
9. Serve the noodles sprinkled with parsley, optionally add homemade tomato ketchup.

Whole grain side dishes are most nutritious when they are made from whole grains. Unfortunately, whole grain noodles are often not popular with children (and adults). Try using lighter spelt whole grain noodles; they taste less 'whole grain.' Alternatively, start by mixing one-third whole grain noodles with regular pasta and gradually increase the whole grain ratio. For children, pasta in fun animal shapes can sometimes make them more appealing.
