- 3 tbsp Olive oil
- 1 heaped tbsp Smoked paprika
- 1 tsp Ground coriander
- 0.5 tsp Ground cumin
- 2 tsp Garlic granules
- 0.5 Lime
- 3 large Chicken breast
- 1 finely sliced Red onion
- 1 finely sliced Red bell pepper
- 1 finely sliced Yellow bell pepper
- 6 Tortilla wraps
- 4 tbsp full-fat Greek-style yogurt
- 40g / 1.4oz grated Cheese
- 2 ripe Avocado
- 0.5 Lime
- 1 Salad tomato
- small bunch Coriander
- to taste freshly ground Black pepper
1. Preheat oven to 200°C (400°F).
2. Mix 3 tbsp Olive oil, 1 heaped tbsp Smoked paprika, 1 tsp Ground coriander, 0.5 tsp Ground cumin, 2 tsp Garlic granules, and juice of 0.5 Lime in a bowl.
3. Add 3 large Chicken breasts cut into strips, 1 finely sliced Red onion, 1 finely sliced Red bell pepper, and 1 finely sliced Yellow bell pepper. Stir and set aside.
4. Wrap 6 Tortilla wraps in kitchen foil and warm in the oven for 15 minutes.
5. Blend 2 ripe Avocados, juice of 0.5 Lime, 1 Salad tomato, and a small bunch of Coriander. Transfer to a bowl and sprinkle with freshly ground Black pepper.
6. Heat a non-stick pan over high heat. Add marinated chicken and vegetables, cook for 8 minutes until chicken is fully cooked.
7. Serve wraps with a spoonful of 4 tbsp full-fat Greek-style yogurt, guacamole, cooked chicken, vegetables, and 40g grated Cheese.
