Ingredients

- 0.5 Onion
- 1 small Garlic clove
- 1 Red bell pepper
- 800g / 28.22oz grated Cauliflower
- 100g / 3.53oz grated Cheese
- 100g / 3.53oz diced Cooked ham
- 1 tbsp Olive oil
- 3 Egg
- to taste Salt
- to taste ground Black pepper

Preparation

1. Preheat oven to 170°C (338°F). Grease muffin tin with butter or coconut oil.
2. Finely dice 0.5 Onion and 1 small Garlic clove. Halve, clean, and wash 1 Red bell pepper, then dice. Clean, wash, and grate 800g / 28.22oz Cauliflower. Grate 100g / 3.53oz Cheese. Dice 100g / 3.53oz Cooked ham.
3. Heat 1 tbsp Olive oil in a pan. Sauté Onion and Garlic until soft. Add diced Red bell pepper and sauté briefly. Add grated Cauliflower and cook for 3-4 minutes. Season with Salt and ground Black pepper. Remove from heat and let cool.
4. Beat 3 Eggs in a bowl and season with Salt and ground Black pepper. Stir in grated Cheese and diced Cooked ham. Add Cauliflower mix and stir well.
5. Divide mixture into muffin tin and bake for 30 minutes. Let cool briefly before removing from tin.
