Ingredients

- 130g / 4.59oz pitted Dates
- 100g / 3.53oz unsweetened Dried sour cherries
- 120g / 4.23oz Cashews
- 50g / 1.76oz soft Rolled oats
- 2 tbsp soft Coconut oil
- 2 tbsp unsweetened Cashew butter
- 50g / 1.76oz unsweetened Cornflakes

Preparation

1. Line a baking sheet with parchment paper.
2. Soak 130g/4.59oz pitted Dates in hot water for about 10 minutes, then drain and chop finely.
3. Add all ingredients except 50g/1.76oz unsweetened Cornflakes to a food processor and blend into a coarse paste.
4. Gently mix in the Cornflakes.
5. Spread the paste about 2cm thick into a rectangle on the baking sheet.
6. Refrigerate for about 1 hour.
7. Cut the rectangle into 12 bars. Store in an airtight container in the refrigerator for up to 10 days.
