- 130g / 4.6oz Broccoli
- 150g / 5oz Self-raising flour
- 1 tsp Baking powder
- 2 Egg
- 0.5 tsp Smoked paprika
- 0.5 tsp Mustard powder
- 70g / 2.5oz grated Cheddar cheese
- 150ml / 5fl oz Milk
1. Preheat the oven to 180°C fan (200°C/400°F).
2. Grate 130g / 4.6oz Broccoli and microwave for 2 minutes or steam for 5 minutes, then chop.
3. Mix 150g / 5oz Self-raising flour, 1 tsp Baking powder, 2 Eggs, 0.5 tsp Smoked paprika, 0.5 tsp Mustard powder, 70g / 2.5oz grated Cheddar cheese, and 150ml / 5fl oz Milk in a bowl.
4. Add cooked Broccoli to the mixture and mix well.
5. Spoon the mixture into a greased muffin tin.
6. Bake for 12-15 minutes for mini muffins or 15-20 minutes for regular muffins until golden and springy.
