- 3 ripe Banana
- 1/2 Vanilla pod
- 50ml / 1.69fl oz Rapeseed oil
- 50g / 1.76oz Unsweetened apple puree
- 1 Egg
- 120g / 4.23oz Natural yogurt
- 100g / 3.53oz Spelt flour (Type 630)
- 80g / 2.82oz Ground almonds
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1 pinch Salt
- 2 tbsp Almond flakes
1. Preheat the oven to 180°C (356°F). Grease the form with butter or coconut oil.
2. Peel 3 ripe Bananas, halve 1 Banana lengthwise for garnish.
3. Scrape out the seeds of 1/2 Vanilla pod.
4. Mash the remaining Bananas with a fork and mix immediately with the Vanilla seeds, 50ml / 1.69fl oz Rapeseed oil, 50g / 1.76oz Unsweetened apple puree, 1 Egg, and 120g / 4.23oz Natural yogurt in a mixing bowl.
5. Mix 100g / 3.53oz Spelt flour with 80g / 2.82oz Ground almonds, 1 tsp Baking powder, 1/2 tsp Baking soda, and 1 pinch of Salt, and stir into the Banana mixture.
6. Pour the dough into the form and top with the halved Bananas (cut side up).
7. Sprinkle with 2 tbsp Almond flakes and bake in the oven for 45-50 minutes until golden brown.
8. Remove from the oven and let cool on a wire rack.
