- 10cm / 4in coarsely grated Courgette (zucchini)
- 1 coarsely grated Apple
- 80g / 3oz grated Cheddar or vegan cheese
- 2 large Tortilla wraps
1. Gather the coarsely grated Courgette (zucchini) and Apple, squeeze out the liquid, and mix with 80g / 3oz grated Cheddar or vegan cheese in a bowl.
2. Heat a large dry frying pan over medium heat.
3. Place one large Tortilla wrap in the pan, spoon half the mixture onto one half, and fold to enclose.
4. Add the second Tortilla wrap and remaining mixture, folding over to enclose.
5. Cook for 4–5 minutes on each side, flipping once until golden. Cool for a few minutes and cut into wedges to serve.
