Ingredients

- 290g / 10.23oz Pitted prunes in apple juice
- 115ml / 3.88fl oz Apple juice or purée
- 80g / 2.82oz ground Ground almonds
- 2 tbsp heaped Milled flaxseeds
- 120g / 4.23oz self-raising Self-raising flour
- 1 tbsp Maple or fruit syrup
- 1 tsp Baking powder
- 3 tsp Almond extract
- 1 tsp pure Pure vanilla extract
- 3 Eggs or chia eggs
- 2 tbsp Milk of your choice
- 70g / 2.47oz melted Unsalted butter or coconut oil

Preparation

1. Preheat the oven to 180°C fan (200°C/400°F).
2. Add 290g / 10.23oz pitted prunes in apple juice to a large bowl and break up slightly.
3. Add 115ml / 3.88fl oz apple juice or purée, 80g / 2.82oz ground almonds, 2 heaped tbsp milled flaxseeds, 120g / 4.23oz self-raising flour, 1 tbsp maple or fruit syrup, 1 tsp baking powder, 3 tsp almond extract, 1 tsp pure vanilla extract, 3 eggs or chia eggs, 2 tbsp milk of your choice, and 70g / 2.47oz melted unsalted butter or coconut oil.
4. Stir until just combined.
5. Divide the mixture between muffin cases.
6. Bake for 15-20 minutes for large muffins or 14-16 minutes for mini muffins.
