How to Prepare
1. Heat 2 tbsp Olive oil in a 9- or 10-inch nonstick or cast-iron pan over medium heat. 2. Add 3 thinly sliced Garlic cloves and cook for about 30 seconds until fragrant. 3. Add 1 bunch roughly chopped Red Swiss chard and a pinch of Sea salt, then sauté for another 5 minutes until wilted. 4. Make four wells in the chard and add a small amount of the remaining Olive oil in each well. 5. Crack 1 large Organic egg into each well. 6. Season with Sea salt and Black pepper. 7. Cover with a lid and cook over medium-low heat for 4-6 minutes until the whites are set. 8. Transfer to plates and garnish with 1/4 cup crumbled Feta cheese and optional chopped fresh dill. Serve with Lemon wedges.
