1. Place 130g / 4.6oz dried couscous, 1 mashed banana, 1 tsp pure vanilla extract, 1 tsp mixed spice, and 400ml / 14fl oz unsweetened soya milk or full-fat milk into a saucepan. 2. Cook over medium-high heat for 10-12 minutes, stirring often until couscous plumps and pudding thickens. 3. Allow to cool a little before serving.
