Ingredients

180g / 6.35oz trimmed and halved Asparagus, 400g / 14.11oz sliced into thin noodles Courgettes, 350ml / 11.83fl oz Cream, 1 tsp Dijon mustard, 125g / 4.41oz Cream cheese, 2 tbsp rinsed, drained and roughly chopped Capers, 1 juice and zest Lemon, 2 tbsp chopped Dill, 100g / 3.53oz Smoked trout

Preparation

1. Fill a small saucepan with water and bring it to the boil. Add a pinch of salt and 180g / 6.35oz trimmed and halved Asparagus. Cook for 1-2 minutes, refresh in ice-cold water, and set aside. 2. Drop 400g / 14.11oz sliced Courgettes into the boiling water for 30 seconds, refresh in cold water and drain. 3. Pour 350ml / 11.83fl oz Cream into a saucepan with 1 tsp Dijon mustard and bring to the boil. Reduce the heat and simmer until it thickens slightly, about 5 minutes. 4. Stir in 125g / 4.41oz Cream cheese, 2 tbsp rinsed, drained and roughly chopped Capers, juice and zest of 1 Lemon, and 2 tbsp chopped Dill. Season with salt and pepper. 5. Stir in the Asparagus, Courgette noodles, and 100g / 3.53oz Smoked trout. 6. Garnish with a drizzle of olive oil and Parmesan shavings.
