Ingredients

250g / 8.82oz peeled and diced Pumpkin (or butternut), 1 Egg

Preparation

1. Steam 250g / 8.82oz peeled and diced Pumpkin (or butternut) for 25-30 minutes with the lid on, until soft. Reserve the liquid. 2. Blend the cooked Pumpkin in a food processor or using a hand blender until smooth. Use a little of the reserved cooking liquid to thin it out if necessary. 3. If adding the Egg, boil it for 9 minutes until hard, then blend it into the purée. 4. Keep a portion to use now and freeze the rest for later.
