Ingredients
3 ripe Bananas, 240g / 8.47oz Oat flour, 1 tsp Vanilla extract, 1 tsp Baking powder, 35g / 1.23oz Coconut sugar, 250ml / 8.45fl oz Coconut milk
Preparation
1. Preheat the oven to 180°C (350°F). 2. Peel and mash 3 ripe bananas in a large mixing bowl. 3. Add 240g / 8.47oz oat flour, 1 tsp vanilla extract, 1 tsp baking powder, and 35g / 1.23oz coconut sugar to the bowl and combine. 4. Stir in 250ml / 8.45fl oz coconut milk until combined. 5. Pour the mixture into a prepared loaf pan lined with parchment paper. 6. Bake in the preheated oven for 50 minutes until a skewer inserted into the middle comes out clean. 7. Leave to cool on a wire rack before slicing to serve.

If you do not have oat flour, you can make your own by blending oats in a high-speed blender, or alternatively you could use buckwheat flour.
