Ingredients

177.44ml / 6fl oz Fresh lemon juice, 2 tbsp Organic cane sugar, 2 tbsp Raw honey, 237ml / 8fl oz Cold water

Preparation

1. Bring a small saucepan of water to a boil. 2. Whisk together 177.44ml / 6fl oz fresh lemon juice, 2 tbsp organic cane sugar, and 2 tbsp raw honey in an 8x8 inch metal baking pan. 3. Pour in 237ml / 8fl oz just-boiled water and whisk until the sugar and honey have dissolved. Stir in 237ml / 8fl oz cold water. Let the mixture cool to room temperature. 4. Cover and place in the freezer for 2 hours. 5. Remove the slushie from the freezer and use a fork to scrape up any frozen bits, then return to the freezer for another hour. 6. Remove, scrape with a fork to break up any new ice crystals, then return to the freezer for 1 more hour. 7. Do one final scrape before serving.
