Ingredients

400g / 14.1oz Skinless chicken breast fillets, 60ml / 2.03fl oz Extra virgin olive oil, 1 Lemon juice, 1 tbsp Dijon mustard, 1 crushed Garlic clove, 1/2 tsp Ground black pepper, pinch Salt flakes

Preparation

1. Cut 400g / 14.1oz skinless chicken breast fillets into 2 cm cubes and place in a glass dish. 2. Whisk 60ml / 2.03fl oz extra virgin olive oil, juice of 1 lemon, 1 tbsp Dijon mustard, 1 crushed garlic clove, 1/2 tsp ground black pepper, and a pinch of salt flakes. 3. Pour marinade over chicken and marinate for 15 minutes. 4. Soak 8 bamboo skewers in water for 10 minutes. 5. Heat a barbecue or chargrill pan to medium. 6. Thread chicken onto skewers and cook, turning, for 10 minutes or until cooked through.
