Ingredients

100g / 3.53oz unsulfured, pitted Dried plums, 120g / 4.23oz Raisins, 60g / 2.12oz Cashew nuts, 80g / 2.82oz Almonds, 2 tbsp Unsweetened cocoa powder, 2 tbsp Soft virgin coconut oil, 40g / 1.41oz Defatted coconut flour

Preparation

1. Soak 100g / 3.53oz unsulfured, pitted dried plums in hot water for 10 minutes. 2. Drain and chop the plums. 3. Add all ingredients to a food processor and blend until smooth. 4. Spread shredded coconut on a plate. 5. Form 30 walnut-sized portions using damp hands. 6. Roll each ball in the shredded coconut. 7. Store the balls in an airtight container in the fridge for up to 1 week or freeze in portions. Thaw briefly before enjoying.
