Ingredients
1 tbsp Butter, 1 chopped Onion, 1 clove crushed Garlic, 3 stalks fresh Thyme, 150g / 5.29oz cubed, bone removed Beef shin, 2 tsp Tomato paste, 200g / 7.05oz peeled and diced Sweet potato, 175g / 6.17oz peeled and sliced Carrots, 250ml / 8.45fl oz Chicken stock
Preparation
1. Melt 1 tbsp Butter in a saucepan over medium heat. Add 1 chopped Onion and fry until very soft. 2. Add 1 crushed Garlic clove and 3 fresh Thyme stalks, cook for 1 minute. 3. Add 150g cubed Beef shin and fry until it browns slightly. 4. Add 2 tsp Tomato paste and cook for 1 minute. 5. Add 200g peeled and diced Sweet potato, 175g peeled and sliced Carrots, and 250ml Chicken stock. 6. Simmer over gentle heat for 60-90 minutes with the lid on, until the meat is very soft. 7. Blend to desired consistency or mash with a potato masher.
