Ingredients
- 1 Garlic clove
- 2 tbsp Olive oil
- 1 tbsp Ground flaxseed
- 2 tsp Medium mustard (without added sugar)
- from 1/2 lemon Lemon juice
- 60g / 2.11oz Natural yogurt (1.5percent fat)
- 2 tbsp Nutritional yeast flakes
- to taste Salt
- to taste Pepper
- 2 Mini Romaine lettuce
- 1 Garlic clove
- 2 Spelt baguette slices
- 1 tbsp Olive oil
- 40g / 1.41oz Parmesan shavings
- 2 tbsp Olive oil
- 1 tbsp Ground flaxseed
- 2 tsp Medium mustard (without added sugar)

- 60g / 2.11oz Natural yogurt (1.5percent fat)
- 2 tbsp Nutritional yeast flakes
- to taste Salt
- to taste Pepper
- 2 Mini Romaine lettuce
- 1 Garlic clove
- 2 Spelt baguette slices
- 1 tbsp Olive oil
- 40g / 1.41oz Parmesan shavings
Preparation
1. Peel and finely dice 1 Garlic clove.
2. Mix all dressing ingredients thoroughly in a salad bowl and season with Salt and Pepper to taste.
3. Remove the outer leaves of 2 Mini Romaine lettuces, tear the leaves, wash, dry, and cut into broad strips.
4. Peel 1 Garlic clove.
5. Cut 2 Spelt baguette slices into cubes.
6. Heat 1 tbsp Olive oil in a non-stick pan and roast Garlic and bread cubes until crispy for 3-5 minutes.
7. Remove Garlic and drain bread cubes on paper towels.
8. Mix the lettuce with the dressing and distribute on plates.
9. Top with bread cubes and 40g / 1.41oz Parmesan shavings.
