Ingredients
- 1 ripe Avocado
- 1 tsp Lemon juice
- 1 Egg
- 30g / 1.05oz Flour
- 40g / 1.4oz Panko
- 1 tbsp Olive oil
- 1 tsp Lemon juice

Preparation
1. Preheat the oven to 200°C (392°F).
2. Cut 1 ripe Avocado in half, remove the seed, and scoop out the flesh.
3. Slice the avocado flesh into strips and sprinkle with 1 tsp Lemon juice.
4. Beat 1 Egg in a shallow dish.
5. Coat avocado strips in 30g / 1.05oz Flour, dip into the beaten Egg, and finally coat with 40g / 1.4oz Panko.
6. Line a baking sheet with parchment paper, place the avocado strips on it, and drizzle with 1 tbsp Olive oil.
7. Bake for 12 minutes, then turn them over and bake for another 10 minutes.
