Ingredients

- 50g / 1.76oz dried Dried tomatoes
- 2 tbsp Olive oil
- 2 tsp dried Italian herbs
- 0.5 Cucumber
- 6 slices Whole grain bread
- 220g / 7.76oz drained Chickpeas
- 1 Garlic clove

Preparation

1. Drain 220g / 7.76oz drained Chickpeas in a sieve, rinse and drain. Peel and roughly chop 1 Garlic clove. Puree Chickpeas, Garlic, 50g / 1.76oz dried Tomatoes, 2 tbsp Olive oil, and 2-3 tbsp cold water in a blender until creamy. Stir in 2 tsp dried Italian herbs.
2. Wash and slice 0.5 Cucumber into 12 approx. 1cm thick slices. Spread three slices of Whole grain bread thickly with the chickpea mixture and cover with the remaining three slices. Use a round cutter (Ø 4cm) to cut out 4 circles from each sandwich and top each with a Cucumber slice. Secure with decorative flags if desired, but remove before eating.
